This Avocado Lime Mousse is quite savior when you want to eat and live clean. It's guilt free, free-from all allergens, is keto friendly and vegan, and it boosts your immune system. It's a super easy to throw together, and has a handful of simple ingredients that most health fanatics have stored in their cupboard.
Knowing this mousse is full of healthy fats and good fruits such as avocado and lime makes eating this worthwhile. Once whizzed together, its texture is smooth with a slightly sweet but bitter taste, and combines well with your favourite yogurt or cream. Together it's texture and taste is pretty amazing, I dare you to try it!

Avocados are classed as fruit, but can eaten as savoury as well. We eat them either way, and particularly love them with eggs and bacon. If you can eat them raw, cooked, as a fruit or a vegetable you're immune system will be bouncing with joy.
Chef's Avocado Lime Mousse Notes & Tips
This healthy mousse can be whipped up in a couple of minutes. Before eating, let it chill for at least one hour, it slightly thickens up and of course it tastes nicer chilled.
Only use Hass ripe avocados. If you choose to ripen at home, put them on your window sill for a day or two to soften.
Depending where you live some avocados can be particularly large, especially if you live in hot humid countries. A large avocado averages about eight ounces. If using smaller or larger size avocados in this recipe adjust the lime and erythritol quantity accordingly.
It is better to use grounded erythritol, but granulated is fine. You don't have to run out and buy grounded, just blend an average quantity (approx 200g) until powdery. You can also use a hand blender.
Avocados are perfectly freezable, simply put the mousse in an ice cube tray and freeze. But why defrost it when you can whiz it up a healthy alternative ice-cream!

This recipe is completely sugar-free. Don't ever be tempted to use agave or maple syrup as some experts suggest because they're loaded with sugar making them an unhealthy choice. Also, don't be tempted to use honey because its strong taste will overpower the mousse.

- Halve, peel and pit your avocados, put them in your pyrex jug.
- Grate the zest and juice the limes.
- Add the erythritol, lime juice, zest, blend together until smooth using your hand blender.
- Top with lime zest or anything you fancy.
- Serve with a good helping of coconut yogurt or cream.
