Chocolate: Quality dark chocolate preferably free-from sugar is rich in flavanols and polyphenols, offers small amounts of copper, iron, magnesium, manganese, zinc, potassium, phosphorus, selenium and protein. The fatty acid profile is also excellent being mostly saturated and monounsaturated with small amounts of polyunsaturated fat. It is a good source of probiotics, and also contains caffeine and theobromine which some people are sensitive to. We use is Montezuma's Absolute Black 100% Cocoa Bar, it's tasty and is super low carb and Hershey's Cocoa Powder because it contains zero carbs.
Erythritol: Although this contains zero nutrients, it is a great substitute for cane sugar. It comes from a natural source, doesn't cause side effects like cane sugar and other sugar substitutes, and tastes almost like sugar. Chef's Notes & Tips
This healthy chocolate avocado mousse can be whipped up in 5 minutes. Preferably let it chill for at least 1 hour to thicken. Serve it alone or with coconut yogurt and shavings of dark chocolate. Oh, you won’t regret making it, it’s so delicious!
Avocado is perfectly freezable, simply put the mousse in an ice cube tray and freeze it. But why defrost it when you can whiz it up in a blender to make a healthy alternative ice-cream, your kids will love it!
To keep it cool store it in the fridge for no more than 3-4 days.
Make sure your avocados are Hass and fairly ripe. If you choose to ripen at home, put them on the window sill for a day or two to soften.

Step By Step Instructions:
- Peel and pit the avocados.
- Put them in your pyrex jug.
- Put 1 tbsp of lime in a ramekin, then add the erythritol. Microwave for 10-20 seconds to allow the sugar to dissolve to become more like a syrup. If you don't do this step your mousse will be grainy.
- Add the syrup, left over lime (about 1 tbsp), stevia, cocoa powder & salt to the pyrex, then blend together using your hand blender.
- Add the shaved chocolate to the blended ingredients, then mix together with spoon.
- Serve with a good helping of coconut yogurt and top with more chocolate shavings.
