We think mug bread is easier to make than a loaf because it's always fresh, you can make it minutes when that craving comes on. When it's fresh, it tastes better too, it's less egg tasting and not overly crumbly. It's great with butter whether toasted or not, and sandwiched between burgers or your favorite meat.
Keto Coconut Mug Bread
- 2 tbsp Coconut Flour
- 1 tbsp Nut Milk
- 1 tbsp Coconut Oil
- 1 Medium Egg
- 1/4 tsp Baking Powder
- 1/4 Himalayan Salt
- 1/4 tsp Xanthan Gum
Add all the dry ingredients in a bowl and mix together.
Add the wet ingredients to the dry and beat until smooth.
Add the mixture to a mug and pat it down a little.
Put into the microwave and cook for 1.40 seconds. My microwave is 800 watts.
You can remove, slice and eat as is or toast it lightly.
