That all changed when I first started experimenting with this particular soup, it certainly got their attention.
Wow, even the cynical ones tried it, but not without positive criticism to which I'm eternally grateful...they said, 'mum it's too sweet'. To cut a long story short of perfecting it this soup took at least four attempts to foolproof it.
I knew I'd hit jackpot when everyone sat down to eat and no-one said a word, there was complete silence with a resounding 'oh yes that was so yummy' with their thumbs up.
This soup proves with only a handful of ingredients you can eat healthy very easily.

This vegan Goji Tomato Lentil Soup is simple and easy to make, and it's perfect for any season and retains all its flavours whether you eat it hot or cold. Once you get the hang of mixing it, you'll have this master in no time and eaten in less than 2 minutes flat.

Recipe Notes And Recommendations
Whenever I make this Goji Tomato Lentil Soup there's never enough...not a drop is left in my Thermomix. I would suggest if you're wanting seconds or more for the next day, then double the recipe to keep everyone happy.
This soup is superfood rich, full of red goodness and very tasty, even my youngest who dislikes soups loves it and almost always asks for seconds.
Free-From Simple Goji Tomato Lentil Soup
- 1 roughly chopped Red Onion
- 3 Garlic Cloves
- 1 tsp Cumin Seeds
- 1/2 tsp Chilli Powder
- 50 g Red Lentils
- 50 g Goji Berries
- 1 can of Plum Tomatoes
- 600 g Vegetable Stock
This part is very important...melt oil and sizzle the cumin seeds for about 1-2 minutes, be careful not to burn them. If you're using a Thermomix, melt oil for 1 minute on temperature 100 degrees.
Add the rest of the ingredients.
Stove Method: Bring to boil, then simmer for 20 minutes. Once cooked it will need to cool down before blending.
Thermomix: Turn switch to setting 2, set the temperature to 100 degrees for 25 minutes. Once cooked bend for 1 minutes on setting 8.
