Caribbean Curry Preparation
I know the temptation when we’re busy is to take shortcuts, but preparing your own sauces and meals isn’t that difficult and takes no more time. Ingredients and execution are simple, however if time is of essence then 1/2 a jar of Pataks Curry Paste is a good alternative.

Delicious Simple Caribbean Curry
- 1 tsp Cumin Powder
- 1 tsp Mild or Hot Chilli Powder
- 2 Garlic Cloves
- 1 tbsp Tomato Puree
- 1 inch Fresh Ginger
- 1 Large White Onion
- 1/2 Can of Coconut Milk
- 2 tbsp Extra Virgin Coconut Oil or Ghee
- 1 tsp Garam Masala
- 1 tsp Cumin Seeds
- 1 tsp Turmeric Powder
- 1 tsp Coriander Powder
- 1 Green Chilli (optional)
- 1 Red Chilli (optional)
- 1 kg Diced Organic Chicken
- 1 Aubergine (Egg Plant)
- 250 g Wholegrain Rice mixed with Wild Rice
Bring a pan of water to boil to cook the wholegrain rice - this usually takes 20-30 minutes.
To make the puree blend the 'paste ingredients' together until it resembles a paste.
Melt coconut oil and sizzle cumin seeds for 2 minutes or wait for the seeds to pop, then add chilli's, coriander, garam masala and cook for a further 1 minute.
Add diced chicken and aubergine; cook until meat is sealed.
Add curry paste and simmer for 20 minutes.
Add turmeric and simmer for a further 10 minutes.
Add more coconut milk if you prefer the sauce not so thick.
