This porridge reminds me of Ready-Brek when I was a little girl, do you remember those days? It was the perfect breakfast any time of the year, especially winter and autumn. It felt like it put a warm halo around your body to ward off nasty colds.
Well, I’ve good news for you, this tasty vanilla coconut porridge feels almost like your eating Ready Brek. Even when cooked, it looks very similar, but all without the nasty ingredients and obviously healthier.
No disrespect to my youngest daughter who has always had a mission to be independent made this porridge without me watching her. I was upstairs when all of sudden I could smell a slight burning, so with an attempt to rescue her, I went downstairs only to find she was eating overcooked porridge that resembled thick gloopy scrambled eggs.
My advice to anyone making this is to not overcook it.

This coconut porridge is dairy-free, sugar-free, nut-free and gluten-free. With only a handful of ingredients, you’ve got the perfect keto breakfast.
Most children particularly love chocolate instead of vanilla, if that’s your child just add some cocoa powder until your happy with the flavour. It’s the ideal heartwarming keto porridge and the most filling breakfast before going to school or work, it will cure all midday cravings.
If your diet permits try adding some different fruits, stewed apple, a little banana, few chopped nuts, a dollop of coconut yogurt, or mix and match.
We use a Vitamix to prepare this delicious porridge, if you don’t own a food processor that cooks, then use a small pan on your stove.
